This dish is a winner amongst the whole family – juicy, flavoursome and incredibly filling. Feel free to add a chilli if you want to spice things up!
Preheat the oven to 180C fan/200C
Heat the oil in a large baking tray in the preheated oven
Add the sweet potato to the tray, gently tossing them to fully coat and cook for 15 minutes
Once the sweet potato has started to brown, add the peppers, courgette, cherry tomatoes, thyme and garlic to the tray and bake for a further 15-20 minutes
Whilst the veggies are cooking in the oven, prepare the cod fillets by adding a dash of olive oil and freshly ground black pepper – pop in the oven for the remaining 10-12 minutes of your vegetable traybake
Everything should be ready at the same time – remove from the oven, gently mix the vegetables for the final time before topping with the cod fillets and several black olives and serving
