This is a great recipe for the whole family and ideal if you are entertaining. It’s minimal effort with maximum impact and taste.
Add the pasta to boiling water and cook according to the instructions – cook until it still retains a little bite to it. Once cooked, drain under cold water until thoroughly cooled
Meanwhile, add the mangetout to another pan of boiling water for 2 minutes, then add the broccoli and cook for a further 4 minutes. Once cooked, drain under cold water to cool
Toast the sunflower seeds over a medium heat until slightly browned
Combine all of the dressing ingredients in a large jar, put the lid on and give it a thorough shake to combine
In a large bowl add the pasta, broccoli, mangetout, spinach and flaked mackerel before pouring on the dressing. Gently stir to combine
When serving, top with the toasted sunflower seeds, walnut pieces and spring onion. Finish with a couple of grinds of fresh black pepper
