Whisk together all of the ingredients for the dressing. Place both fish fillet in a shallow dish and pour over half of the dressing, turning the fish to coat.
Plate up the rocket leaves, grapefruit segments and apple slices.
Grill the fish fillets for 2-3 minutes (depending on thickness) per side, until cooked through and place on top of the rocket salads.
Sprinkle with fresh mint leaves and halved olives before pouring on the remaining half of the dressing and serve immediately.
