Homemade chicken satay is a great replacement for the takeaway meal and much healthier too. It tastes fresh, spicy and delicious, sure to be a hit with the whole family.
Soak the skewers in cold water and set aside.
Put the lemongrass, ginger, peanut butter, vegetable oil, fish sauce, curry powder, coconut and water into a blender, whizz until well combined but still chunky.
Pre-heat the grill to medium.
Put the chicken into a bowl and pour over the satay sauce, stirring to coat.
Thread the chicken onto the skewers and arrange on a non-stick baking sheet.
Grill for 7-10 minutes, turning occasionally, until cooked through.
Serve with a dollop of yogurt and a large green salad.
