Breakfasts
Chia, berry and spinach smoothie – Serves 1
Ingredients
- 80g berries, such as raspberries, strawberries, blackberries, blueberries
- 350ml soya or oat milk
- 2 tsp chia seeds
- 80g spinach, washed
Method
- Combine berries, milk, chia seeds and spinach in a blender and whizz until smooth
- Serve immediately

Midday Meals
Boiled eggs with creamy pancetta soldiers – Serves 1
Ingredients
- 2 eggs
- ½ tbsp olive oil
- ½ ripe avocado, cut into chunky wedges
- 50g pancetta rashers
Method
- Bring a large saucepan of salted water to the boil. Carefully drop the eggs into the water and boil for 5 mins for runny yolks, boil for a little longer if you prefer your yolk less runny
- Whilst the egg is boiling, heat the oil in a medium frying pan and wrap each avocado wedge in pancetta. Fry for 2-3 mins over a high heat until cooked and crispy
- Serve the eggs once cooked and use the avocado wedges as soldiers

Evening meals
Fillet steak with cauliflower mash – Serves 1
Ingredients
- 1 whole cauliflower
- Pepper
- 1 tbsp natural yogurt
- Olive oil spray
- 100g fillet steak
Method
- Cut the cauliflower into florets and cook in boiling water until tender, then mash
- Add the pepper and yogurt. Set aside on a plate
- Heat a griddle pan, spray the steak with oil and cook for 3 minutes on each side
- Put the steak on the plate with the cauliflower mash and serve immediately
