Shrove Tuesday Sweet Potato Pancakes
We thought we’d try something a little different this pancake day. These delicious sweet potato pancakes are just as quick as any ordinary pancake but are loaded with nutritional goodness. The sweet potato will slowly release energy whilst the greek yoghurt will provide you with a nice amount of protein, all of which will keep you feeling fuller for longer.
Serves 1
Ingredients
- 1 medium sweet potato, roasted & cooled
- 2 eggs, beaten
- 1 tbsp ground linseed
- Pinch of allspice
- ½ tsp vanilla extract
- 1 tbsp Greek yoghurt
- Pinch of cinnamon
- 5 pecans, chopped
- 1 tsp honey
Method
- Remove the skin from the sweet potato and mash in a bowl
- Add in the eggs and all spice and mix to combine
- Heat a pan over a medium-high heat with a teaspoon of olive oil
- Spoon ¼ of the mixture onto the griddle and cook for 5-7 minutes
- Keep an eye on the time as these pancakes won’t give you the telltale bubbles to remind you to flip them
- Gently flip using 2 spatulas and cook for a further 3-5 minutes
- Top with Greek yoghurt, cinnamon, chopped pecans and honey
