Recipe of the week – Egg-white Omelette with Broccoli & Feta
Egg-white omelette with broccoli and feta cheese is light with creaminess and tang coming from the feta cheese. To make this dish easier save some broccoli (or other green veg, it can be anything you like) from a previous meal. Whip this up for a quick healthy breakfast. For lunch or evening meal serve with a large salad or cooked vegetables.

Ingredients
- ½ head broccoli, broken into florets
- 3 large organic egg whites
- 1 tsp olive oil
- Salt and pepper
- 25g organic feta cheese
Steps
- Steam the broccoli
- In a bowl, whip the egg whites until frothy
- Heat the olive oil in a frying pan, pour in the eggs and cook until firm
- Add the broccoli and seasoning, then crumble over the feta cheese
- Fold the omelette over and serve immediately
