Recipe Of The Week – Veggie & Cod Traybake
This dish is a winner amongst the whole family – juicy, flavoursome and incredibly filling. Feel free to add a chilli if you want to spice things up!
Serves 4
Ingredients
- 4 cod fillets
- 1 tbsp extra virgin olive oil
- 200g sweet potato, cut into chunks
- 1 red bell pepper, deseeded and cut into chunks
- 1 yellow bell pepper, deseeded and cut into chunks
- 1 courgette, cut into chunks
- 200g cherry tomatoes, left on the vine
- 4 fresh sprigs of thyme
- 4 garlic cloves, crushed with skin on
- handful black olives
Method
- Preheat the oven to 180C fan/200C
- Heat the oil in a large baking tray in the preheated oven
- Add the sweet potato to the tray, gently tossing them to fully coat and cook for 15 minutes
- Once the sweet potato has started to brown, add the peppers, courgette, cherry tomatoes, thyme and garlic to the tray and bake for a further 15-20 minutes
- Whilst in the oven, prepare the cod fillets by adding a dash of olive oil and freshly ground black pepper – pop in the oven for the remaining 10-12 minutes of your vegetable traybake
- Everything should be ready at the same time – remove from the oven, gently mix the vegetables for the final time before topping with the cod fillets and several black olives and serving
