Recipe Of The Week – Leftover Turkey Fajitas
Having enough leftover turkey to feed an army is a common occurrence throughout many households over the Christmas season. This needn’t be used merely as a sandwich filler, there are far more exciting ways to use your leftover meat, enabling you to enjoy yet another delicious feast, keeping your waistline high on the list of priorities.
Serves 4
Ingredients
- 2 peppers, sliced
- 1 onion, sliced
- 1 clove garlic, crushed
- 1/2 tsp chilli flakes
- 2 tsp tandoori spice
- 400g leftover cooked turkey
- 1 iceberg lettuce, shredded
- 8 tortilla wraps
- Guacamole
- Salsa
Method
- Add the peppers and onion to a frying pan and cook over a medium heat until softened
- Add the garlic, chilli flakes and tandoori spice and saute for a couple of minutes until fragrant. Add a dash of water if the spices begin to stick to the pan
- Add in the cooked turkey and heat until completely warmed through
- Serve with shredded lettuce, tortilla wraps and toppings such as guacamole and salsa
