Recipe of the week – Cucumber & Butter Bean Salad with Mint
Cucumber and butter bean salad with mint is put together in quite literally seconds. Pile the mixture into the middle of a large green salad or top a baked sweet potato for lunch or main meal.
Stuff the mixture into pittas or wraps for great take-to-work lunches.
Serves 1
Ingredients
- 75g tin butter beans, rinsed
- 1 small courgette, diced
- ½ red pepper, diced
- ¼ red onion, finely sliced
- Juice of ½ lemon
- 2 tbsp fresh mint, chopped
- ½ tbsp olive oil
- Salt and pepper
- Lean protein of choice

Mix together all of the ingredients in a bowl and serve immediately with your choice of lean protein – it really is that simple!
