Recipe of The Week – Chocolate, Coconut & Nut Oats
Chocolate for breakfast? It’s unlikely that you’ll have a better start to the day!
Simply combine all of the ingredients for a quick, simple and delicious breakfast for the whole family. Or breakfast for you, made for the entire week ahead!
Serves 4
Ingredients
- 50g raisins
- 200g jumbo porridge oats
- 2 tbsp unsweetened cocoa powder
- 2 tbsp coconut flour
- 500ml hazelnut milk
- 1 tsp vanilla extract
- 40g assorted plain nuts, chopped, to serve
- 2 tbsp unsweetened desiccated coconut, to serve
Steps
- Cover the raisins with boiling water and set aside for 10 minutes
- Combine your dry ingredients in a large saucepan – oats, cocoa powder and coconut flour before stirring to combine
- Drain the raisins and add to the pan along with the hazelnut milk and vanilla extract before stirring to combine
- Put the pan over a medium heat for approximately 5-8 minutes, stirring whilst the oats begin to thicken
- Once the desired consistency has been reached, serve immediately
- Serve with ½ tbsp desiccated coconut 10g assorted plain nuts
