Recipe Of The Week – Chickpeas, Cottage Cheese & Avocado on Rye
This delicious vegetarian meal is so easy to create in a matter of minutes. If having for midday or evening meal, double the quantity and accompany with a large side salad.
Serves 4
Ingredients
- 1 x canned chickpeas, drained and rinsed
- 4 tbsp low-fat cottage cheese
- 2 tsp sesame seeds
- 4 slices rye bread
- 1 avocado, finely sliced
Method
- Once your chickpeas have been drained and rinsed, lightly mash them with the back of a fork and combine with the cottage cheese
- On each slice of bread, top with 2 tbsp of the chickpea and cottage cheese mixture, followed by the sliced avocado and a sprinkling of sesame seeds
