Recipe of the week – Chicken Satay
Homemade chicken satay is a great replacement for the takeaway meal and much healthier too. It tastes fresh, spicy and delicious, sure to be a hit with the whole family.
Serves 4
Ingredients
- 1 lemongrass stick, finely chopped
- 4cm piece fresh root ginger, peeled and roughly chopped
- 2 tbsp crunchy peanut butter
- 1 tbsp vegetable oil
- ½ tbsp fish sauce
- ½ tsp mild curry powder
- 2 tbsp creamed coconut
- 2 tbsp water
- 4 chicken breasts, cut into finger-sized strips
- Small handful fresh coriander, roughly chopped
- Plain yogurt and a large green salad, to serve
- 8 medium bamboo skewers
Method
- Soak the skewers in cold water and set aside.
- Put the lemongrass, ginger, peanut butter, vegetable oil, fish sauce, curry powder, coconut and water into a blender, whizz until well combined but still chunky.
- Pre-heat the grill to medium.
- Put the chicken into a bowl and pour over the satay sauce, stirring to coat.
- Thread the chicken onto the skewers and arrange on a non-stick baking sheet.
- Grill for 7-10 minutes, turning occasionally, until cooked through.
- Serve with a dollop of yogurt and a large green salad.
