Recipe Of The Week – Blackberry & Apple Baked Oats

Our Blackberry & Apple Baked Oats are so easy to throw together. The ingredients can be combined ahead of time (this makes it even tastier) and popped in the oven whilst you’re getting ready in the morning.

It’s a real crowd pleaser, and something that will keep you going for hours.

Cook a large batch and breakdown into portions for the week ahead. Alternatively, make a large tray for the whole family to enjoy on a busy weekday morning.

Serves 4

Ingredients

  • 500ml unsweetened almond milk
  • 2 cinnamon sticks
  • ½ tsp nutmeg
  • 2 royal gala apples, cored and cut into 1cm pieces
  • 200g jumbo porridge oats
  • 1 egg, beaten
  • ½ tsp almond extract
  • 1 tsp baking powder
  • 100g almonds, roughly chopped
  • 300g blackberries
  • 200g low-fat natural yoghurt (or dairy free alternative), to serve
  • 4 tsp almond butter, to serve
  • Ground cinnamon, to serve

Steps

  1. Preheat the oven to 200C/180C fan
  2. Add the milk, cinnamon sticks, nutmeg and apple to a small saucepan
  3. Cover and gentle bring to a simmer for 10-12 minutes, letting the ingredients infuse
  4. Set aside to cool for 15 minutes
  5. Discard the cinnamon sticks after cooling
  6. Pour the infused milk and apples into a large bowl before gently crushing some of the apple with the back of a fork – you don’t need to be too precise with this
  7. Add the oats, egg, almond extract, baking powder, almonds and blackberries to the bowl
  8. Pour the mixture into an ovenproof dish and cook for 30-35 minutes, or until cooked through
  9. Serve with 50g of low-fat natural yoghurt, 1 tsp almond butter and a sprinkling of cinnamon
