Leftover Christmas Turkey Casserole
Our leftover Christmas turkey casserole is delicious and satisfying, and something the whole family can enjoy all over again. It is inevitable that with Christmas, comes plenty of leftovers. It may seen unappetising to have the same meal the following day in the form of bubble and squeak, so why not add a few simple herbs and flavours to make a fresh new meal.
Serves 4
Ingredients
- 2 spring onions, finely diced
- 2 tbsp unsweetened apple sauce
- 1 tbsp olive oil
- 1/2 tbsp fresh parsley
- 1 tbsp fresh chives
- 1 tsp dried sage
- 2 tbsp plain flour
- 300ml chicken stock
- 2 tbsp wholegrain mustard
- 1 tbsp runny honey
- 500g leftover turkey, shredded
- 400g leftover roasted vegetables, e.g. parsnips, potatoes, carrots, swede, sprouts, turnips. Cut into bite-sized chunks
- Green veg of your choice, to serve
Method
- In a deep pan, gently fry the spring onions with the olive oil until softened
- Add in the applesauce, parsley, chives and sage and stir for 30 seconds
- Add the flour, stir to combine before adding the stock
- Bring to the boil before adding the mustard and honey and stirring to combine
- Add the turkey and leftover veg and bring to a simmer
- Leave to simmer for 15 minutes, ensuring the turkey is hot throughout
- Season with salt and pepper before serving with the green veg of your choice such as broccoli, sprouts or kale
